Tortilla Wrap

Ingredients

2 Cups (7 oz.) cauliflower florets, riced
½ tsp garlic powder
½ tsp taco seasoning
1 egg, beaten

Instructions

  1. Preheat oven to 450 degrees
  2. In food processor, pulse the 2 cups cauliflower florets until pieces are rice size
  3. Cook cauliflower in microwave on high for 5 – 6 minutes or until softened
  4. Add garlic powder and taco seasoning
  5. Mix and let cool a bit
  6. Add beaten egg while stirring so the egg doesn’t cook in the cauliflower mixture
  7. Line a baking sheet with parchment paper
  8. Divide mixture in half
  9. Spread two circles of batter on parchment paper as thinly and evenly as possible
  10. Bake 15 minutes
  11. Remove from oven
  12. Peel wraps off parchment and flip
  13. Bake one more minute

Servings: 2 C. veggies + 2 oz. lean protein (whole egg)
